Who doesn’t like a freshly-baked meatloaf? It’s safe to say it’s a favourite amongst our residents at Birchwood House. Serves: 4

Ingredients

  • 50g fresh white breadcrumbs
  • 4tbsp grated parmesan
  • 300g minced beef
  • 200g minced sausage
  • 1 onion finely chopped
  • 1 garlic clove finely chopped
  • 1 egg beaten
  • 1 tsp tomato puree
  • Salt and pepper
Classic meatloaf drizzled with gravy

Preheat the oven to 180. Mix 2tbsp of the breadcrumbs and parmesan in a small bowl and set aside. Tip the remaining ingredients into a large bowl and season with salt and pepper. Mix the ingredients together – it is better to use your hands for this. Once the ingredients have been combined transfer into a loaf tin and sprinkle the remaining crumb mix on top. Bake in the oven for 40 to 45 minutes until the top is golden. Cool for 5 minutes then remove from the loaf tin. Slice and serve with your choice of potatoes and seasonal vegetables of your choice.
