Ingredients

  • 225 g all-purpose flour
  • 125 g suet
  • 100 g stuffing pre-made or leftover
  • 1 medium onion roughly chopped
  • 20 g butter
  • 10 rashers smoked streaky bacon
  • Salt
  • Freshly ground black pepper
  • Cooking oil
  • 200ml cold water (for the dough)

Method

  1. To make the suet dough, mix suet and flour in a bowl, gradually adding approximately 200ml of cold water until the mixture has the consistency of soft dumpling dough. Set aside.
  2. In a frying pan, melt butter over medium heat and sauté the finely chopped onion for 2-5 minutes until soft but not browned. Remove from the pan and set aside.
  3. On a floured sheet of greaseproof paper, roll the dough into a rectangle, approximately 15 x 30 cm. Spread the stuffing evenly over the dough, leaving a 1cm border. Lay the bacon rashers in a row, slightly overlapping each one to cover the stuffing. Add the sautéed onions in a thin layer and season with salt and pepper.
  4. Wet the edges of the dough with cold water to form a seal. Using the greaseproof paper, carefully roll the dough into a tight log, ensuring the edges are sealed but not too tightly. Wrap the pudding in tin foil to secure it while steaming.
  5. Steam the pudding for 2 hours. If using a stovetop steamer, check the water halfway through to prevent it from boiling dry.
  6. Once steamed, remove the pudding from the steamer, discard the foil and paper, and transfer to a lightly oiled baking sheet. Bake in a preheated oven at 200°C (Gas 6) for 30 minutes, or until the surface is golden and slightly crispy. (Alternatively, skip baking and steam for a total of 2 hours 30 minutes for a softer finish.)
  7. Let the roly poly rest for 5 minutes before slicing and serving. Enjoy your delicious Bacon Roly Poly—bon appétit!
