Baked Salmon and Creamy Chive Sauce
This baked salmon is perfect for our residents, filled with omega-3 fatty acids that support heart health and brain function. We were inspired by HelloFresh to pair it with a creamy chive sauce, which went down a treat!
We also added green beans, along with a rosti potato for some crisp texture. Here’s how to make it for yourself:
Ingredients
(for 2 servings)
- 2 salmon fillets
- 75grams of creme fraiche
- 450grams of potatoes (with egg, flour, and baking powder if you’re making rostis)
- 80grams of green beans
- 1 garlic clove
- Lemon and herb seasoning
- Tablespoon of vegetable stock paste
- 50ml water
Method
- Peel and grate your potatoes, squeezing the excess water.
- Place this in a bowl, combining egg, flour and baking powder and seasoning.
- Heat oil in a frying pan over a medium heat, spooning the mixture into 4 rostis moulding them into disc shapes.
- Cook for 5 minutes each side until golden brown and crisp, then drain with some kitchen paper.
- When your potatoes are cooking, trim the green beans, chop the chives, and peel and grate the garlic.
- Place your salmon fillets skin-side down onto a large baking tray, before drizzling with oil. Rub in the lemon and herb seasoning.
- Roast the salmon on the top shelf of the oven for 10 – 15 minutes, until the salmon is opaque in the middle.
- When the salmon is in the oven, you can either steam or fry your green beans. For frying, place the beans into a pan with hot oil and fry for 2-3 minutes. Add some garlic, turn the heat down and cook for another minute until tender.
- Once the beans are done, place them in a covered bowl to keep warm. Then add the creme fraiche, vegetable stock paste and water to the pan, bringing the mixture to a boil and then simmering until thickened. This should take about 2-3 minutes.
- Once the sauce has thickened, take it off the heat and stir in half of the chives.
- When the salmon’s ready, place it on a plate and spoon over the chive sauce, add the accompanying potatoes and veg, and garnish with the other half of the chives.
